The man page has descriptions for

--exclude=PATTERN
--exclude-from=FILE

but not for 
--exclude PATH

The man page contains an example for this option but no description.

I don't follow what you mean.  If you mean you left off the equal sign, read the opening paragraph of the OPTIONS section -- it mentions that the '=' is optional for all value-taking options.
