Like in summary. When I read some FAQ from net I found rsync --server ...
But when I try rsync --help - It dosnt display it...

--server is an internal option that rsync uses when invoking itself.  End users should never use it.  Thus, I don't see a reason why it needs to be documented in --help output, and if it were documented, users might use it when they shouldn't or confuse it with --daemon.  See bug 4001.

As Matt says, --server is not a user option (and neither is --sender), so neither option will ever be displayed by --help.
